Beat 3 eggs on high speed for 5 min. Add 2 cup of sugar a little at a time. Stir 2/3 cups of pumpkin and 1 teaspoon of lemon juice.
Mix Together
¾ Cup Flour 1 teaspoon Baking Powder 1 Teaspoon Cinnamon 1 teaspoon Ginger ½ teaspoon Nutmeg ½ teaspoon salt ½ teaspoon Pumpkin spice
Then fold above mixture into Pumpkin mixture. Spread mixture into greased and floured jelly roll pan (15x10x1). Top with 1 cup of chopped nuts. Bake at 375 degrees for 15 minutes. Then turn out on towel sprinkled with powdered sugar. Starting at narrow end, roll towel and cake together. Cool and unroll.
Filling
1 Cup powdered sugar 1 (8 oz) package of cream cheese 4 tablespoons margarine ½ teaspoon vanilla
Beat until smooth spread over cake then roll cake again and refrigerate.
