1 pound dried lentils, cooked and drained 25 cherry tomatoes, halved 1 green pepper, chopped 1/2 red onion, chopped 6 radishes, chopped 1-1/2 cups crumbled feta cheese 1/4 c. olive oil 1/4 cup red wine vinegar 1 t. pepper 1-1/2 t. salt Combine first 6 ingredients and mix. Combine oil, vinegar, salt and pepper and drizzle over salad. Refrigerate and let rest for an hour to mingle flavors. |
