1 8 oz package cream cheese
2 eggs beaten
3/4 c sugar
2 9 in graham cracker crusts
2 pkgs vanilla instant pudding
3/4 c milk
2 cups peeled, cook, mashed sweet potatoes (2-3 lg potatoes or 1 17 inch can)
Dash of cinnamon
1 1/2 c cool whip
Preheat oven to 350 degrees. In a medium bowl mix cream cheese, eggs, and sugar. Spread mixture into pie crust and bake for 20 minutes. Let cool. In a large bowl mix pudding mix and milk until smooth and thick. Add sweet potatoes and cinnamon and mix well. Fold in 1 c whipped topping. Spread mix over cooled pies. Garnish with remaining 1/2 c whipped topping.
