Jambalaya
The quality of the sausage makes all the difference
1 cup long grain rice
1 cup water
1/4 cup clam juice
1/4 cup Olive Oil
1/4 lb Tasso Ham, diced
1/2 lb. Andouille Sausage, sliced
1 lg Onion, diced
1 lg. Green Pepper, diced
3 ribs Celery, diced
1 can Italian Tomatoes, chopped
1 1/2 cups water
1 Tbl. Clam Base
16 lg. Shrimp
1 Tbl. Parsley, chopped
1 Tbl. Scallions, chopped
Combine rice, 1 cup water, and clam juice in a pan, cover and bake 45 minutes at 350 degrees.
Sautee meats in oil over low heat for 15 minutes.
Add celery, onion, and pepper - cook auntil soft.
Add tomato, water, and clam base (paste). Simmer 1 hour.
Season to taste with salt, black pepper, cajun spice, etc.
Combine cooked rice, shrimp, parsley, and sauce - simmer until liquid is absorbed. Garnish with scallions. Serves 4.
